I like stuffed vegetables as they make the dish attractive. I fried Shitake mushrooms stuffed with hamburger tonight.

Ingredients of Shitake Hamburger for serves 3 :

  • 200 g of minced beef and 50 to 100 g of minced pork
  • one handful of bread crumbs
  • 2 table spoons of milk
  • a little nutmeg, ground
  • 4 table spoons of Yakiniku barbecue sauce
  • half onion, finely chopped, then fried until it becomes transparent and cooled down
  • 1 egg
  • 1 packet of Shitake mushrooms
  • a little flour, salt, black pepper, oil

I have tried without onion today to experiment as hamburgers sold in supermarkets often contain less vegetables in the burger. I wanted to find what makes the meaty hamburger less tasty.

As I put Yakiniku barbecue sauce and much more bread crumbs than is stated above, the taste was ok, but the texture was a little harder than ones with fried onion.

When I put sweet onion in hamburgers, inside was juicy and had mature taste. Therefore this is my conclusion that onion can not be omitted.

Then, how about meet freshness and quality? The beef I bought this morning, I opened only in this evening, had old meet smell already. As I put the Yakiniku barbecue sauce today, it hide its quality and freshness. Sometimes I use herbs to hide the old taste and make meat in better condition for food safety as well.

If you like stuffed vegetables and Shitake mushrooms, why not try cooking for a change, with onion and your favourite spices and sauce ?

I would like to find butchers who deal fresh and high standard meat. I should try Waitrose as I have not been there for raw food for ages. There are no shops around my house, then I must go for shopping with a cooler next time.

Yesterday, I found Shitake mushrooms produced in the UK at Tesco supermarket.

Since sometime last year, I had missed UK Shitake mushrooms as it seemed they have changed to import them from China. It seems some supermarkets still only sell Shitake from China.

I do not say Shitake from China is not good, however, I just would like to avoid higher risks possibly underlying based on information which are not broadly or reliably available.

Anyway, we can not avoid all risks off course, then, I just would like to take extra care of matters where possible.

The photo below is from Waitrose, I have used it for stir fry recently. They tend to have good sense of product selections in my point of view. As they do not have many supermarkets, there is not one near my home.
